Chocolate Banana Bread and Butter Pudding Oh Yeah.


While in Sydney I purchased this beautiful tin, which inside contained Panettone, it was on special and being as it was a few days past Christmas I had low expectations for the food within but was more interested in the tin itself. Beautiful.  Now what to do with the stale Panettone??? it smelled amazing but tasted dry (apparently that's just how it is) however, an idea struck. I struggled to find a version on the internet of this recipe, so this is my written version taken from watching Ray on TV, so apologies if it differs from the original.

Chocolate Banana Bread and Butter Pudding ala Ray McVinnie. Genius.

Ingredients:

Butter as needed
Sliced Stale french stick/raisin bread/ brioche/sourdough/croissant/ Panettone! enough to cover your square baking dish two layers worth.(I used about 1/2 a Panettone loaf)
2-3 ripe bananas
1 1/2 cups choc chips (dark is good!)

For the Custard:
4 eggs
500ml milk
1/2 cup brown sugar
1/2 t vanilla (essence or the real deal)

Preheat Oven -  Bake 180 degrees C


Layer 1
Melt your butter in a pot on low heat or in microwave (just slice off a bit and melt it you can always do more, depending on your surface area on your bread you may need more or less). Grab your baking dish (I used a square 20x20cm dish but you can alter the above measurements to fit whatever you have).  Brush the melted butter on to one side of your sliced bread and lay these in the dish buttered side down to cover the bottom. You can overlap them  a bit to make them fit, small gaps are ok.

Layer 2
Sliced bananas all over the top

Layer 3
Evenly sprinkle over 1 cup chocolate chips

Layer 4
Another layer of your bread this time buttered side up (overlap these ones a little to make the top look good)

Final steps
Mix all your custard ingredients in a bowl and whisk together till mixed, then carefully pour over the bread layers - filling in the gaps with custard mix, once all in gently push on the  bread so the mix soaks into the bread - leave it for 10 minutes or so for the bread to soak up the liquid.  Sprinkle remaining 1/2 cup choc chips on top and 1/2 cup of brown sugar.

Bake 45mins, serve with cream or vanilla icecream.

Beware its very sweet! but very addictive! Enjoy!

What I'm thankful for today....



1) Molly at 21 Months
The terrible two's are beginning early.  My cheeky monkey  makes me experience a full range of emotions on a daily basis, just as she does.  Currently she wants to run in any direction I'm not going in. She's a smarty too, shes been trying to count to 10, but she keeps missing 6 and she knows most of the alphabet even though she can't pronounce all of it yet, but she does have a large vocabulary - I have to act as translator alot of the time with other people.  She is obsessed with Elmo, Winnie the Pooh, nursery rhymes, swings and going to see penguins.  Molly loves Vegemite (but she calls it Marmite because she cant pronounce Vegemite yet), strawberries, cheese, chips (both crisps and hot chips shes not bothered) and frozen peas -  straight from the freezer.

2) Strawberries
I love strawberries, Molly and I pick them from the garden and after she has washed them (and the floor) she eats them with reckless abandon, no thought for the drippings of red juice that fall down her chest, that mummy will have to soak out later, just pure gusto for the joys of the strawberry.  I used to be like that as a child, eating until I got hives, now I'm lucky to get any at all.

3) Christmas 
Its stressful, exhausting, expensive, time consuming...all these things, but also joyous, fun, exciting and cheery! How can you not love Christmas?  Its so worth it.

4) Christmas Trees
What  a good idea. Just looking at it in the evening twinkling away makes me feel all twinkly on the inside.

5) The wonders of modern dentistry
without which I would look like a toothless, 12 year old.

Christmas Top 5 2011

Every year my husband needs a little push in the right direction (as do many husbands who leave it all till Christmas Eve and then panic shop) so I try and at least arm said darling husband with some kind of list - its usually short and not unreasonable and he does pretty well, adding a few extras of his own as well to keep the surprise element.

Christmas Top 5 presents wanted this year 

1. Stolen Girlfriends Club Bow Ring

This is the one and only thing I have actually asked for this year (to increase the chances of actually getting it!) I went and tried it on having lusted over it online, it is quite beautiful, simple, elegant, shiny and a stunning design, the band gets wider underneath, a nice touch.  If you feel really extravagant it also comes in  a double bow - yummy.
2. Elie Saab le Parfum 

 Elie says

Well that says it all really. I want to be one of those women.

3. A Goat from ChildFund 

I would really like a goat for a child in Africa. For $68.00NZ you get two of them -bargain. They will supply milk for the children to drink and baby goats (kids that is ) to sell. It doesn't get much better than that really does it.  While we are on the topic you can get  a mosquito net for $11.00NZ - the insect responsible for the most human deaths in the world (death to all mozzies!! I hate em!)




4. Chocolate 

Ok so Ferrero don't rate well on the fair trade list but God they taste good - its only once a year after all.
Whittakers  however taste good and they are fair trade and they have the best website ever (make sure the sound is on) so if you want chocolate... buy theirs guilt   free...and its New Zealand made - awesome.




5.  Tunic and Cardigan

Christmas tunes

I'm so excited about Christmas this year and even more so now that She and Him  have released a new Christmas Album. Entitled 'A Very She and Him Christmas' it surely will be. Have dropped a few hints to hubby that we must purchase this on LP (red vinyl!!) although I might need a CD copy for in the car. Zooey Deschanel has the most divine angelic vocals and old songs reworked in the M Ward fashion make it all fresh and a joy to listen to.  It will happily go with our other Christmas listening namely Bob Dylan's 'Christmas in the Heart' and  The Buff Medway's 'Merry Christmas Fritz'. Oh joy!
